20150818_132210 (2) Fairy Cakes – 4oz butter, 4oz caster sugar, 2 eggs, 1tsp vanilla, 4oz self raising flour, 1tbspmilk. For icing- 5ox butter, 10oz icing sugar, 1 tbsp milk and food colouring of choice.

Preheat oven to 180 and put cupcake cases in a tray20150818_140825

Cream sugar, vanilla, butter and beat eggs in slowly.

Sieve flour and fold into mixture, add a little milk, spoon into cases.

Bake for 13-15 minutes and let cool on a wire tray.

For icing- beat 1/2 icing sugar and butter together (let the butter soften at room temperature for a few minutes to make this easier)

Add the rest of the icing sugar and milk until creamy and smooth. At this point add food colouring if you wish!

Use a piping bag and add decorations!20150818_145300

I found this recipe on and it is amazing! (Anything with peanut butter is great really!)

Peanut Butter Cupcakes- 160g self raising flour, 1 tsp bakingpowder, 1/4 tsp salt, 120g smooth peanut butter, 80g butter, 80g dark sugar, 2 large eggs, 1tsp vanilla, 4 tbsp buttermilk. For icing- 300g icing sugar, 85g butter, 90g cocoa powder, 1tsp vanilla.

Preheat oven to 170, mix flour, baking powder and salt together.

Cream butter, peanut butter and sugar. Add to bowl, beat in eggs one at a time, add vanilla and carefully add buttermilk.20150818_151920

Bake for 18-20 minutes. Again let them cool on a wire tray.

For icing- Sieve icing sugar and cocoa. Beat butter and vanilla until fluffy in a separate bowl. Fold butter into the cocoa and sugar mix. Add 3 tbsp buttermilk or water and mix until smooth.
